Going To Church- A New Experience

Grandma’s Elf on the Shelf


I came from a large, loud family. Being shy and creative, I sought peace and inspiration during hectic times by visiting my Grandma, living nearby. I was rewarded with cookies, tea, and her undivided attention…which I treasured.

My Grandma died when my children were young. I inherited her collection of miniature mid-century children’s wooden ornaments. Too tiny to hang with today’s over-sized ornaments...

Getting Through the Grief


Tomorrow morning, it will have been exactly one week since an act of violence at Sandy Hook Elementary forever changed our entire country.  Our hearts have been heavy, and it may feel like peace is nowhere in sight. 

A very thoughtful article sent to me from Bob Mueller, Senior Director of Mission & Stewardship at Hosparus, made me think about this intense grief that we’re all feeling in a different, hopeful way.  I hope this excerpt from it helps your heart heal.
As they walk through grief, many people learn to make their own decisions, to forget their old selves, and to begin being better and stronger persons. They realize the need to keep on living and loving. There is marvelous power in accepting the fact that a change in our lives has occurred. Something has been lost, but new experiences can be found. The valley of the shadow of death is never a place to live; it is a place to go through.

Fun Activities for Winter Break


Due to my dislike of crowds and spending money, my family generally doesn’t do much in the way of entertainment during the Christmas break from school. With that being said, I do like to keep

This year, I am excited by the prospect of “40 Nights of Lights” at 4th Street Live. Starting at 6:00 pm every weeknight through January 1, 2013, and running every hour on the hour until 10 pm, there will be a free light/music show. There are eight different “shows” that will run, which will provide plenty of variety for my family. We can take a thermos of hot chocolate, a few blankets, and just hang out.

I always look to the Louisville Free Public Library for fun and free things to do.

Christmas in My House


That first Christmas that everything was up to me, I was all for dispensing with having a Christmas tree. My kids would have none of it.

So we got the tree, struggled it home, wrestled it into the stand, and dragged it inside. We set it up in a corner of the living room. We put the lights on it and got going putting on several bazillion ornaments.

When a Christmas tree stands in a corner, roughly only 2/3 of its circumference is actually decorate-able, a fact that wasn’t immediately obvious to me until...

Talking to Kids About Tragedy


When traumatic events occur, it is normal for children (and adults) to respond in an anxious and fearful fashion following the traumatic event. In fact, parents need to closely monitor their child’s behavior over the next few weeks since their child’s reaction would be considered normal unless it continues beyond this time. Responses to trauma vary, especially in children, and may range from: acting out behaviors, aggression, crying, tantrums, avoidance of certain places or situations perceived as “dangerous,” engaging in repetitive play that may mimic the traumatic event, and nightmares. However, it is important that parents reassure their children in a simple, factual, yet matter-of-fact fashion about the recent events in Newtown. Here are a few tips:

A) Don’t catastrophize. Hallmark features of anxiety are thoughts of uncontrollability and unpredictability of future events. Anxiety surrounding the recent tragedy is definitely normal and expected in many cases. Children may ask, “Why did someone do this?”

Our hearts and thoughts go out to the families of those from Sandy Hook Elementary in Newton, Connecticut, right now.  We are deeply saddened for those families and that community and will lift them up in our thoughts and prayers daily.

Have a Fun Weekend!


There is just one special event that you'll want to focus on this weekend.  It’s something that you could make into a family tradition, if it’s not already. 

Tonight, I want you to join your community at…
Light Up Louisville!

Running in it’s 32nd year, the city of Louisville’s annual celebration is moving to 4th Street Live! (where they’ve set up an actual ICE RINK!) and will feature a festival of lights set to music starting at 4th and Main Streets all the way to Fourth Street Live!. The 40 Nights of Lights celebration will feature a nightly show of synchronized lights and music.

To start to the festivities, you won’t want to miss the Winter Wonderland Parade at 6pm.  The procession will travel down Liberty to 4th Street and then to Main Street.  It’s Louisville’s only nighttime parade- so exciting!

Oh… and let’s not forget that Santa will be arriving at 8:30pm right before the music, lights, and fireworks begin!

So, kick off your family’s holiday celebrations by joining us tonight at Light Up Louisville!

Mother & Daughter Share “Diana: A Celebration”



I was a (young!) teenager when Lady Diana married Prince Charles. I sat glued to the TV, watching the ceremony, the pageantry, and … the dress.

When I heard that “Diana: A Celebration” was coming to the Frazier History Museum, I had to go and take my daughter, Autumn (age 10). To watch Diana’s dress on TV was great. To see the real thing, to walk 25 feet along the train, to see all the tiny pearls that were hand stitched, to see the tiara that topped her head - now that was magnificent.

Happy “Extra Hour of Sleep” Weekend!


You know it’s going to be a great weekend when you get an extra hour of sleep, and you don’t even have to plan for it!

When you go to bed this Saturday night, be sure to set your clocks back an hour because Sunday, November 4, marks the end of Daylight Saving Time (DST).  It actually ends at 2am, but we’re pretty sure you’re not going to get up at that time and change your clocks.

Not-So-Scary Decor

Weekend Fun in Spencer County: Part 2


There was just so much to do in Spencer County, Indiana, I had to break it up into a couple of posts for your viewing enjoyment! (In case you missed Part 1, you can read it here.)


In Rockport, your family can snuggle up together under the stars (or in the back of your SUV) and catch a double-feature on the big screen at the Holiday Drive-In, or dine at the Rockport Inn, a super-old mansion turned into a Bed and Breakfast and restaurant (They have lots of curiosities here. Take a look at that Halloween mannequin in the top photo!).






Just a few minutes from Lake Rudolph is Santa’s Stables where you can enjoy horseback riding. This is a great attraction for the whole family.  Even your little ones will get to ride through the trail with one of the trainers.

{If you’re wondering why my kids are wearing their bike helmets, it’s just because I’m one of those super-vigilant, over-the-top, helicopter-type, ridiculous moms who go overboard with safety.  Honestly, though, it really was a very safe trail ride on calm, beautiful horses, and we couldn’t have had a better time!}




Oh, don’t forget to stop at Buffalo Run Farm, Grill & Gifts where you can feed the buffalo and go inside an old cabin where legend says that Abraham Lincoln once slept.


Speaking of Abraham Lincoln, Spencer County is known as Lincoln’s Indiana Boyhood Home! Enjoy a little history while walking the trails at Lincoln Boyhood National Memorial and Lincoln State Park.


Our first-grader was so excited that he could read to us the facts along the Trail of Twelve Stones, which features notable places in Lincoln’s life.

Weekend Fun in Spencer County: Part 1


Only about an hour drive from Louisville lies a special place.  Many of us know it for being the county in which Holiday World & Splashin’ Safari resides, but, let me tell you, Spencer County, Indiana, is home to so much more. 

















Located right next to Holiday World & Splashin’ Safari is Lake Rudolph Campground & RV Resort.  This place can accommodate everyone from the seasoned camper who enjoys the outdoors by means of a tent or camper to those of us who prefer something a little cozier and cushy like a Christmas Cabin.  My kids felt like the Seven Dwarfs from Snow White when they hopped into their sleeping quarters!  So sweet!

That’s Dapper Tan, Not Dapper Dan!

















A few years ago I decided to paint my living room, dining room, kitchen, two halls, and stairwell. I’ve got an open floor plan, so more than one color would look like the Partridge Family bus. I chose Dapper Tan, a shade darker than my first instinct, Desert Floor, but my artist friend promised I’d be glad.

I’m a pretty good painter, but I’ve never been the foreman.

“Fruit” Snacks & Drinks: the Real Truth


If there was any good to come from having gestational diabetes during my first pregnancy, it was that I became more aware of sugar content in foods. I check nutrition labels religiously to this day and sometimes get discouraged because there is sugar or high fructose corn syrup (and usually lots of it) in, well.....everything. Reading The Omnivore’s Dilemma by Michael Pollan only ramped up my obsession with food labels.

Fruit snacks and drinks may contain Vitamin C, but a closer look at the nutrition labels suggests these are some of the least healthy foods kids can eat. In many varieties, the first few ingredients are sugar, high fructose corn syrup, or both. One fruit drink serving generally contains between 15-20 grams of sugar. A single serving of a fruit snack may contain 11 or more grams. The American Heart Association recommends that children consume no more than 12 grams of sugar per day.

Many of these snacks and drinks also contain artificial colorings/flavorings or preservatives, such as Red 40 and sulfiting agents. Researchers don’t fully understand if or how these chemical ingredients affect the human body. Some fruit snacks contain gelatin, which is made from collagen. Collagen comes from the boiling of animal hides and bones.

You’re My Favorite!


I would say, "Now, don't tell the other two, but you are my favorite kid!" Now this goes against all parenting advice books, and it might have been a problem, but the key is… I told all three of them that individually.

After I would say that to one of them, he or she would just glow. They figured it out that I had told everyone that at some point as they got older, but we still talk about it.

Some parents seem to be very careful about making everything "even." I have not fully subscribed to that method. I think that children should be treated differently depending on ages and different circumstances. I haven't made sure they all got the same number of presents. Maybe one large gift is better than three smaller gifts for one child. I didn't try to hide this situation, but rather, I explained it along the way.

The one thing that I do think we need to pay particular attention is to make family decisions that are fair. For instance, if you get a cell phone for the first one at age 12, then the next one expects that same treatment unless there is a very good reason to make a change. If you pay for gas for the oldest child's car, you have to pay for gas for the other children's car unless something has changed. Make sure you are making decisions for your oldest that you can keep up with for all your children.

National Eat Together Week- Friday: Pulled Pork Fried Rice


Prep Time: 5 minutes.  Cook Time: 30 minutes.

Ingredients
1/2 pound cooked pulled pork
1 cup long-grain rice
1 3/4 cup water, plus 2 tablespoons
4 1/2 teaspoons safflower oil, OR sunflower, or other high-heat cooking oil
2 cups frozen mixed vegetables, thawed
1 tablespoon chicken broth
2 teaspoons soy sauce, or more to taste
2 large eggs, lightly beaten

Cooking Directions
In a medium pot over medium-high heat, combine the rice and water and bring to a boil. Reduce to a simmer, cover, and cook until the water has evaporated and the rice is al dente, about 15 minutes. Fluff with a fork and set aside, uncovered.

In a wok or large skillet over high heat, warm the oil. Add the pork and cook, stirring occasionally, until lightly browned, about 2 minutes. Transfer about half of the pork to a plate or bowl and cover loosely to keep warm.

Add the rice and vegetables to the skillet and stir-fry until heated through, 1 to 2 minutes. Stir in the broth and soy sauce. Make a well in the center of the mixture and add the eggs, gently stirring the eggs occasionally until softly set, 1 to 2 minutes. Stir to mix the eggs into the rice. Add more soy sauce to taste, top with the reserved pork, and serve.

Note: Cooking the rice al dente will help keep it from becoming gummy in the stir-fry.

Makes 6 servings

It’s About Time


I happened upon a poem today that helps me convey this months message … "Time is a Gift". The poem is credited to Shaun William Hayes, and one line in particular speaks volumes:

"Make time, give time, take time out"

This past month has been the busiest ever for my small company - of which I am very grateful. As it happened, friend and family commitments (planned and otherwise) were exceptionally great this past month as well … my time was at risk.

National Eat Together Week- Thursday: Pulled Pork Tacos


Prep Time: 10 minutes.  Cook Time: 10 minutes.

Ingredients
1 1/4 pounds cooked pulled pork , warmed
12 5- or 6-inch corn tortillas, OR flour tortillas
3 cups iceberg lettuce, OR romaine lettuce, shredded (about 1/4 head of iceberg or 1/2 small head of romaine)
1 cup salsa, purchased or homemade, or more to taste

Cooking Directions
Heat a large skillet over medium heat. Place two tortillas in the skillet and cook until warm and softened, about 30 seconds per side. Fill the tortillas with about 1 1/2 ounces of the pork, 1/4 cup of the lettuce, and 4 teaspoons of the salsa.

Repeat with the remaining tortillas and serve.

* If you prefer to heat all of the tortillas at once, microwave them on high until warm and softened, 1 to 2 minutes.

National Eat Together Week- Wednesday: Pulled Pork Greek Salad


Prep Time: 20 minutes.

Ingredients
1/2 pound cooked pulled pork
10 cups romaine lettuce, chopped (about 1 large head)
1/4 cup Italian dressing, purchased or homemade, divided
2 small tomatoes, cut into wedges
1/2 cucumber, halved lengthwise and sliced
1/2 red onion, cut into 1/4-inch dice
1/2 cup feta cheese, crumbled
1/2 cup kalamata olives, halved, pitted

Cooking Directions In a large bowl, toss the lettuce with about half of the dressing. Transfer the salad to plates or a platter and arrange the pork, tomatoes, cucumber, onion, feta, and olives on top. Drizzle with the remaining dressing and serve.

National Eat Together Week- Tuesday: Pulled Pork Scramble



Prep Time: 10 minutes.  Cook Time: 15 minutes.

Ingredients 6 ounces cooked pulled pork
6 large eggs
Salt and pepper
1 tablespoon olive oil
1/2 small red pepper, cored and cut into 1/4-inch dice
1/2 small green bell pepper, cored and cut into 1/4-inch dice
1/2 small onion, cut into 1/4-inch dice
1/4 cup Cheddar cheese, OR Monterey Jack, or mozzarella, shredded, divided  

Cooking Directions
In a large bowl, lightly beat the eggs. Season with salt and pepper and set aside.

In a large skillet over medium heat, warm the oil. Add the pork and stir occasionally until hot, about 1 minute. Transfer to a plate or bowl, cover loosely to keep warm, and set aside.
Return the skillet to medium heat, add the bell peppers, and cook, stirring occasionally, for 1 minute. Add the onion and cook, stirring occasionally, until the vegetables are tender, about 5 minutes. Add the eggs and cook, stirring occasionally, until the eggs are softly set, about 2 minutes. Stir in about half of the pork. Cook, stirring occasionally, until the eggs are set, about 1 minute.

Scatter the cheese and the remaining pork on top and serve.

Makes 4 servings

National Eat Together Week- Monday: BBQ Pulled Pork Pizza


In celebration of National Eat Together Week, September 9-15, we are so excited to give you some great recipes, all of which are made with pulled pork.  To start your week, just prepare a pork shoulder or roast in a slow cooker, oven, or grill, and then incorporate the pulled pork into these great recipes throughout the week.  What a great timesaver!  Enjoy!

Prep Time: 45 minutes.  Cook Time: 10 minutes.  Marinating Time: 12 hours.

Ingredients
6 ounces cooked pulled pork
2 tablespoons water, warm (115 to 120 degrees F)
1/2 teaspoon active dry yeast
1 2/3 cups flour
1/2 cup water, cool (65 to 70 degrees F)
1 teaspoon salt
olive oil, for the bowl
1/4 cup barbecue sauce, purchased or homemade
1/2 cup smoked Gouda, OR smoked mozzarella, mozzarella, or Monterey Jack cheese, shredded
3 scallions, cut into 1-inch pieces


Cooking Directions
To make the pizza dough: In the bowl of a stand mixer, combine the warm water and yeast and set aside 15 minutes (the mixture might not get foamy). Add the flour, cool water, and salt and mix with a dough hook attachment on medium-low speed for 4 minutes. Let rest 5 minutes, then mix on medium speed until the dough is smooth, elastic, and slightly sticky, about 3 minutes.

Lightly oil a medium bowl. Transfer the dough to the bowl, turning it to coat with oil. Cover the bowl with plastic wrap and set aside to rise at room temperature for 30 minutes. Transfer to the refrigerator and chill the dough at least overnight, or up to 2 days.

Transfer the dough to a countertop and return it to room temperature, 1 to 2 hours.
To make the pizza: Preheat an oven, along with a pizza stone if you have one, to 500 degrees F.

On a lightly floured surface, roll or stretch the dough out to a 12- to 14-inch round. Transfer the dough to a pizza pan or a flour- or cornmeal-dusted pizza paddle. Top with the barbecue sauce, cheese, pork, and scallions. Transfer the pizza to the oven and bake until golden and crisp, 10 to 12 minutes.

Cut into wedges and serve.

Makes 3 or 4 servings

As much as we may be tempted to make it happen unnaturally, our children do not have to be smarter, funnier, or even more socially acceptable than other children their age.

Southern Style Pork Tenderloin

Today's recipe is courtesy of Louisville’s own Catherine McCord of weelicious.
(Serves 6)
Prep Time: 10 minutes.  Cook Time: 15 minutes.  Total Time: 25 minutes.
Ingredients
  • 1/4 cup bourbon
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup dijon mustard
  • 1 tablespoon finely chopped fresh ginger
  • 3 garlic cloves, minced
  • 2 whole pork tenderloins, approximately 2 pounds total, trimmed
Preparation
  1. Place the first six ingredients in a bowl and whisk to combine. Pour into a large zipper bag or glass container large enough to hold the pork tenderloins and marinate overnight or up to 2 days.
  2. Preheat a grill to high heat, and oil the grates.
  3. Remove tenderloins from the bag, reserving the marinade, and grill for 14-15 minutes, turning halfway through or until the internal temperature is 140°F. Remove from heat and set meat aside to rest for 5-10 minutes to allow the juices to rest and redistribute.
  4. While the meat is resting, place the marinade in a small pan. Bring to a boil, reduce to a simmer and cook for 10 minutes.
  5. Slice the tenderloin on a bias and serve with the sauce if desired.
