This is a kid-friendly recipe that we have used many times in my family. It has a great chemical reaction when you add the baking soda, and there is a lot of shaking that the kids can do.

S.K. Caramel Corn
1 cup popcorn, popped. About 16 cups1 c brown sugar
1/4 c light corn syrup
1/2 c butter
1/2 t salt
1 t vanilla
1/2 t baking soda
1 c peanuts (optional)
Place popped popcorn in a large, doubled brown paper bag. Combine sugar, syrup, butter, and salt in microwave-safe bowl. Microwave bowl on high 2 minutes. Stir. Microwave bowl 3 minutes, stirring after each minute. Add vanilla and baking soda and stir. Pour over popcorn in bag. Roll down top of bag and shake well. Microwave bag 1 minute and shake. Microwave another minute and shake well. Microwave 30 seconds and add peanuts if desired, then shake. Microwave another 30 seconds and shake well. Pour onto foil or waxed paper to cool. Store in tightly covered containers. Makes 4 quarts.
