No Bake Caramel Apple Cheesecake

Ingredients
Crust:
1 cup chocolate graham cracker crumbs
¾ cup ground pecans
1 Tbsp sugar
3 Tbsp melted butter
a pinch of salt
Cheesecake Filling:
½ cup dried apples, diced
½ cup apple cider or water
1 ½ cup sugar
2 8 oz blocks of cream cheese, softened
2 Tbsp sour cream
1 ½ tsp ground cinnamon
¼ tsp ground nutmeg
Spiced Pumpkin Whipped Cream:
1 ½ cup heavy cream
2 Tbsp powdered sugar
¼ cup canned pumpkin
1 tsp vanilla
½ tsp cinnamon
¼ tsp allspice
1/8 tsp cloves
Topping:
1 jar of your favorite caramel sauce
